Crockpot Recipe #2

Spinach Lasagna

Ingredients:

1 box lasagna noodles
1 bag fresh spinach
2 cans petite diced tomatoes
1 can tomato paste
1/2 can black olives
olive oil
1 onion
5 cloves garlic
1 small tub cream cheese
1 bag mozzarella cheese
rosemary, oregano, basil, thyme, grated parmesan, salt, & pepper to taste

Directions:
Prep noodles by soaking in warm water 10-15 minutes
Dice onion and garlic and cook with spices and olive oil in tin foil on high for 10-15 minutes or until translucent (I used a toaster oven)
Combine tomatoes, tomato paste, parmesan and spices until delicious sauciness is achieved
Spread just enough sauce on the bottom of crockpot to coat
Lay down first layer of noodles (should be al dente. break to fit)
Cover noodles with a layer of cream cheese + sprinkle with spice
Tear up a portion of the spinach and layer
Add more sauce
Noodles
Onion mixture and olives
Mozzarella (thin layer)
Noodles
Cream cheese+ spices and parmesan
Spinach
Anything else
Final noodle layer
Sauce (Make sure the final layer is something wet!)
Cook on high for 6 hours
Turn crockpot off
Add parmesan & mozzarella and cover until melted and awesome
